How to fry brinjal and vegetables in appe pan

First of all, take an appe pan and put small brinjals, tomatoes, onions, garlic cloves and green chillies in its different slots. Now fry them on low flame with some oil.

Keep turning the vegetables occasionally, so that they cook well from all sides. Vegetables get roasted easily in appe pan with less oil. This gives them a lightly roasted taste, which makes Chokha special.

Prepare dough for moong dal paratha like this

To make parathas, first take wheat flour in a big vessel. Now add parboiled moong dal to it. Keep in mind that the dal should not be crushed too much, so that its grains are felt separately in the paratha.

After this, add salt as per taste, red chilli powder, turmeric and finely chopped green coriander to the flour. Mix everything well, so that the spices and pulses are evenly distributed throughout the dough.

Add Moin to keep parathas soft for a long time.

If you are making parathas for travelling, then while kneading the dough, add some oil or ghee to it. It is called Moyan. This improves the texture of the parathas and they do not dry out quickly.

Now knead a soft dough by adding water little by little as per requirement. Keep the dough covered for some time. After this make small balls of it.

Keep in mind that just adding Moin is not enough to keep the parathas safe for several days. Their proper cooking, cooling, packing and storage is also very important.

Bake moong dal parathas on a pan like this

Now take a ball and with the help of dry flour, roll it into the shape of a paratha. Heat the pan on gas and put the paratha on it.

Apply light oil or ghee on both sides and cook well on medium flame. Keep turning the paratha until it gets golden color and light brown marks on both the sides.

Similarly, prepare the remaining parathas also. Due to the presence of moong dal grains and spices, their taste is a little different and more special than normal parathas.

Make spicy brinjal chokha with roasted vegetables in appe pan.

When the brinjal, tomato, onion, garlic and green chillies are roasted well, take them out in a plate and let them cool.

Now remove the stem of the brinjal and put all the vegetables in a vessel. Add salt as per taste and finely chopped green coriander in it. After this, mash all the vegetables well with the help of a chopper or fork.

If you want to make Chokha more spicy, you can also add some lemon juice and finely chopped onion to it. In this way your delicious roasted brinjal chokha will be ready.

How to pack parathas for travel?

To transport moong dal parathas while travelling, allow them to cool completely. Storing hot parathas directly in an airtight container can cause steam to accumulate and cause them to spoil quickly.

After cooling, keep the parathas in foil or clean airtight container. It is better to keep them in a cool and dry place during travel.

Keep the brinjal chokha in a separate container and if the journey is long or the weather is hot, make arrangements to keep it cool.

urgent matter: The claim that parathas remain safe for 8-10 days cannot be considered correct in every situation. It is not safe to keep moong dal and moist parathas at normal room temperature for so long. During a long journey, eat them quickly and if you have to store them for several days, then arrange for proper refrigeration. In this way, home-made moong dal paratha and roasted brinjal chokha can become a tasty and filling meal for your journey.
